Food and wine pairings

Young (1 to 3 years)
Fresh and floral, with notes of citrus fruit and a beautiful mineral character.
Pairings: Ideal with seafood, grilled fish and fresh cheeses.

At maturity (4 to 8 years)
More complex, it develops aromas of stone fruit, honey and spices.
Pairings: It pairs beautifully with fish in sauce, poultry and delicately spiced dishes.

Long ageing (8 years and over)
Its complexity unfolds with notes of dried fruit, toasted almond and white truffle.
Pairings: Its generous texture and balance make it a perfect match for fine dining dishes and mature cheeses.

Tasting hints

Serve between 10°C and 12°C. Do not serve them too cold, as this may inhibit the aromas.
We recommend decanting our white wines at the time of serving. If the room is warm, prepare a bucket with a bed of ice and place the decanter directly on top. Do not immerse the decanter in iced water. The cold would restrict the aromatic complexity of our wines.

Keeping hints

In a cool (14–16°C) and humid cellar, they can all be kept for many years without concern, even the oldest vintages.
On the other hand, a cellar that is too warm will accelerate the ageing process of the wines.
